What does it mean if the Chocolate is thick or lumpy?
There could be 2 reasons: overcooked or under heated.
- The chocolate could have been over cooked. If this happens remove the lumps with a wooden spoon and discard. Or strain the overly melted chocolate through a strainer. This will remove the sugar that has been crystallised in the chocolate. These crystallised sugars will have a crunchy texture when tasting.
- The chocolate could have been under heated chocolate. If this happens, remove the melted chocolate using the original container and reheat gently in a low power microwave.
